Put some peeled garlic cloves in with the potatoes to boil. Mash 'em up together. Mmmmm. Cheese is good too.

Cream - and push the potatoes through a sieve so that they are really creamy with no lumps. Warm the cream slightly first.

All the above are great ideas - but the important thing is to use russet potatoes. The bad news - I can't find them in Shanghai. They are from the US. Also called "baking potatoes". But I have found that instant mashed potatoes - available at some "foreign" markets, are not all that bad. Anyway, better than using local, waxy potatoes. They are good, but not for mashing.

Sauted onion ,garlic in butter then add them to the potatoes, add lot of cheddar chesse, milk, salt, pepper,sprinkle bit herbs ( oregano/thyme ). I saw some "russet potates like" in traditional market in summer, small sizes and lighter color but not anymore this time.

I'm lactose intolerant so I hated when people don't warn me about the milk in the mash potato. But it's really my fault for not asking since I know better.

But since this forum is about GZ, you may want to warn your Chinese friends if you use milk or cream in your recipe.

My mashed potato is pretty basic--butter over hot potatoes while mashing, evaporated milk, salt, pepper and parsley flakes.


Leftover mashies i convert into croquettas: brown some onions, garlic, ground beef in olive oil, add beef cube and a dash of red wine. Cool. Form patties out of the mashed potatoes, top with the ground beef, then form into a ball, enclosing the meat. Flatten to form a burger pattie then fry in hot oil til golden. Pat excess oil with paper towel. Enjoy!

Yes, Annebin! Use the leftover mashies! The simplest is to just mix them the next morning with a bit of milk and an egg, and chopped raw onion, and make potato pancakes! I am in Shanghai so I cannot bend your ear with an anecdote about potato pancakes. Unless you ask me at malonechris6@hotmail.com

if you add the spring onions, boil them in the milk first to soften and improve flavour. traditional irish way of making champ. also ham and sweet corn is pretty nice.

i got hooked on using either/or

1. creamed philedephia cheese with a little warm milk

2. sweet chilli sauce (so good!!)

A restaurant where I grew up found this delicious way to used mashed potatoes: shape them into balls, roll them in flour (or maybe batter them, can't totally remember), and then deep fry the balls so they were lightly brown and crispy on the outside. Of course adds greatly to the calories. You can also flavor mashed potatoes with fresh chopped parsley, if you like.
