Take hats, sunscreen, and water for everyone, throw them in a babyseat on a mountain bike and enjoy bicycling on some country roads.

The boat ride alone is worth the trip. Biking is a must too, but you might want to figure out how best to make your kids comfortable as the trip may be long for them. The caves a great, but I would avoid them with kids as there will be times when you will have to wade through relatively deep water. (also, who knows what could be done to you when you are in one of them) Mosquitoes will be everywhere.

Just down the river in Guilin there was an absolutely fantastic children's and young adults acrobatic and dance show - 2 shows a night. Riding on the river at night in a sort of a covered boat and going up in the lock, and some great caves (Reed Caves?) to go to that you didn't need to get wet - the trip up to Yangshuo from Guilin was very beautiful but probably quite long for kids so I would take something to keep them occupied as from experience they are not always quite so keen to sit back and chill. Perhaps you can take a full day trip by car down to Guilin - I think it was about an hour when we drove back after catching the boat up.
