Do you want budget or luxury...
Hainan is supposed to be fab - Holiday Inn being the resort of choice for many. (and only one hour away)
Can recommend Kota Kinabalu - have Luxury through to budget with tons to do over there.
Brunei is an interesting experience.
Penang is also supposed to be quite nice - but a bit further away.
Bali is good - but now visa prices are high.
Tiamen Island is superb but a little more difficult to get to.

We're spoilt for choice in this part of the world... but with Thailand and the rest of the Baht Block hot wet and sticky from now til November, I'd go for Hanoi / Hue (much cooler than southern Vietnam).
Unless you want to do crash on a silent beautiful beach - in which case head for Malapascua island (nearest airport is Cebu) or the (quiet) northern coast of Bali.

It really depends on what your budget is, when you are going (you want to avoid the rainy season), how long you want to spend in transit, and whether you can leave early in the day and/or get back to work a little late the first day back from the long weekend.
If you are thinking about taking off during the long Buddha's Birthday weekend, then you will be joining a lot of other travelers.
In order of cheapness for flights, you have Singapore, Bangkok, Saigon, Manila, and Beijing/Shanghai/Hainan. Destinations beyond these hub airports obviously require a bit more time. Hotels can vary but are pretty good value wherever you go in SE Asia. You can also fly via Shenzhen for possibly cheaper airfares but that takes up precious time. Tokyo would be a great trip but it is a long flight and it takes 2 hours to get from the airport to the city.
If you haven't been to anywhere in SE Asia yet, then decide if you want a nice hotel, a nice beach, or some outdoor activities.
Personally, for a city destination, I would go to Hanoi, Bangkok, or Singapore for an easy relaxing weekend. For a beach destination, Bali is always fun, as well as some options in the Philippines. China has lots to offer but I would wait until I had more time and go when the Chinese weren't on vacation themselves.
Take a look at the Cathay Pacific Holidays site for ideas. Your local travel agent should also be able to offer similar deals.
