So I've just moved into my flat in HK, now how can I get a proof of address for it? so I can set-up a bank account

Write and ask the gas or electricity company something (Please confirm ....). Their response will then be your proof of address.

If you did not place a deposit on your towngas or electricity, chances are the bill will still be in your landlord's name. When I tried to open an account at HSBC, they required a proof of BILLING address

Can you ask your employer to open one in your behalf?
