well the NT's are quite big. there isn't much point giving a recomendation for a salon in sheung shui if you live in yuen long! so you might want to narrow the area down a bit.

location-wise, if you're going to be trekking from, say, sheung shui to tseung kwan o, u might as well be heading to central!

I know a good HK hairdresser who works out of Tai Wai (on the KCR line...very close to station). He trained and lived in Australia but is not an Expat hairdresser in the conventional sense of the word.
He does good work, listens to his clients. Prices are a bit high but worth it.
I don't know if you want a Chinese Hairdresser. If you do, I will PM you with the details.

There is a salon in Hong Lok Yuen (Tai Po) whose owner is HK/British I believe. As such he is very used to gweilo hair, and speaks English. I've not used him yet so can not vouch for the cut.
