Hongkong Electric runs some Chinese cooking courses in English through their Home Management Centre in North Point. A friend of mine has done them and said they were great. Check out their web site for more details:

I recently attended a cooking class in Mongkok and Martha Sherpa teaches Chinese and Thai cooking. I enjoyed it very much because it is pretty much hands-on and she can teach in fluent English. Try this website cookery.com.hk

There are shelves of cookbooks at KH Central Library in Causeway Bay. If you want to try cooking a specific dish try looking at the ingredients especially the spices as some might not be available on your local market(e.g. if you are in HK, try consulting first the local cookbooks' as the main ingredients can be easily availed from the local market).
