I always appreciated a gift certificate to a good bookstore, but as there are far more choices in England than HK, I'd hold off on that.
A picture frame with a nice heartfelt note of appreciation is always great. (I definitely appreciated it when my students thanked me in their words and writing.) I think papyrus has lots of beautiful frames. I am also a huge fan of the store Prints for beautiful photo albums and journals and whatnot.
Otherwise, a gift certificate to a nice restaurant for the teacher to enjoy themselves with another lucky person is always nice. enjoying the last of HK before departure.

I think a nice HK book - with good pics - even the sketches of HK by Lorette Roberts are nice."Sights and secrets".
Also Stanley sells some lovely prints of water colours of HK harbour and other scenes which make a lovely going away present!

Certificates for hair care, manicures, pedicures, perfume...anything that pampers. Trust me, a teacher loves getting something to relax with. Or, something more personal/cultural. Really beautiful chopsticks or some lovely place settings. Something to remember HK by.

The problem with coupons etc - if someone is leaving HK then they may actually not have time before they leave to take advantage of this lovely gesture - lot so stuff to do before you actually get on a plane and head off. Pampering yourself is probably way down the list.

A 'Book of Memories' with artwork and photo contributions from the children (profesionally bound and embossed) or a framed enlarged and signed class photo are personal gifts that appear to go down well with teachers.
A pen or similar from Shanghai Tang on a more personal level is simple but useful.

I really suggest NOT giving junk for putting on top of the tv or computer. Most Westerners do NOT go for that sort of thing! If the teacher has been living here for awhile they probably have already got the souvenir things they want to have for their home back in their home country already. As a teacher I appreciate the nice things i have been given like; scarves, gloves, body and bath products, diaries, and even money. Photos of children teachers have taught are nice but not likely to be displayed in reality. Imagine, 30 children each year, year after year....
