Hi there

just moved to HongKong and currently looking for a mobile phone provider what's the overal advice here,

do they all have a good coverage throughout HK? and global roaming?

Coverage isn't a major issue in Hong Kong unless you're out in a really remote area. All of them offer global roaming.
