If it is a professional employment pass (not FDH visa etc), you may stay in HK after quitting your job until your employment pass expires PROVIDED THAT you do not leave HK.

I don't think that's the case because the employment visa is employer-specific (even though it doesn't appear as such in your passport). You are granted permission to work for the sponsoring employer but not for anyone else.
