We are leaving HK in December 2007 after 15 years here and our thoughts have turned to all those things that we thought that we'd do/buy/see before we left.
We lived in a furnished apartment for the first 5 years and then furnished our next home with a lot of IKEA or similar so always thought we'd buy some furniture "to remember HK" but not so much our next home looked like a Chinese museum. If you were to buy furniture what would you buy? Or would you choose something else to remember your time here? Art? Carpets?
I'd also be interested in learning about the things that you'd want to do before you left HK.

1. On a day with clear sky (both day & night time), take a ferry ride across the harbour from the island side to Kowloon, then take a walk along the platform near the Hong Kong Culture Centre and enjoy the view of Skyscrapers with the mountain behind. Remember to take a video too.
2. Do the above on a night when the fireworks will be displayed. e.g. during Chinese New Year

Stay in The Pen, on a fireworks night and have them bring dinner to your room.
Take the helicopter around the island, we did this and just so, so, so amazing!
