Can anyone share their favorite lemon cheesecake recipe?


I am searching for one that is light, fluffy and creamy....similar to the one they sell at Vanilla near the escalator.

No-bake Lemon Cheesecake


Serves two – I have'nt tried doing larger ones as I don’t know if the mixture would still hold after removing the mould. Did it in a small heart-shaped mould one Valentine’s Day... ahhhhh...


Ingredients

Base:

2 plain digestive biscuits, crushed (rolling pin and Ziploc bag works for me)

15g butter, softened

1 tsp clear honey


Fill:

Juice and zest of 1 lemon

250g mascarpone cheese

110g caster sugar

1 tbsp icing sugar


Method

1. Combine the crushed biscuits with the butter and honey. Place this mixture into a small metal ring, making sure you press the mix evenly around the bottom of the mould.

2. Add the lemon juice, zest and caster sugar to the mascarpone cheese. Make sure you don’t mix it too much because the mixture can split.

3. Spoon the mix into the ring. Using a palette knife (or back of a flat-ish spoon) press the mixture into the mould, squeezing out any air gaps.

4. Remove the ring, a hot cloth usually works fine. And place on a plate.


I usually make a coulis from berries I keep in the freezer, usually mixed or raspberries. I use a few to decorate the top too.

Sorry I don't have it, but I just threw away a lemon cheesecake recipe that was printed on the back of a can of Carnation Sweetened Condensed milk. My favorite super-easy lemon pie recipe is: 1 can sweetened condensed milk, 1/3 cup lemon juice, zest from one lemon. Combine and pour into cracker crumb crust, no baking required. (The easiest dessert known to man, people love it tho it is a bit rich and too sweet.) Variations on this are to add whipped cream either into filling or on top. The cheesecake recipe seemed to be another variation where you add a beaten egg and some cream cheese then bake.

Captain> Mascarpone cheese is a cream cheese. It's soft, white to straw-yellow in colour and is from the Lombardy region of southern Italy. It's made using pasteurised milk.


Here is another no-bake cheesecake recipe:


Ingredients

150g digestive biscuits

75g butter

225g cream cheese (can use Philadelphia)

125ml double cream

50g caster sugar

Zest and juice of 1 lemon


Method

1. Crush the biscuits.

2. Melt the butter in a pan, stir in the biscuit crumbs. Take this mixture and line the base of a 20cm springform pan. Put in the fridge to set; to speed things up put it in the freezer.

3. Put the cream cheese in a bowl and beat it until soft then add the double cream, sugar, lemon juice and zest. Mix well.

5. Spread the mixture over the biscuit crumbs and chill before serving.
