We did go there on a Sunday but the queues were too long so don't bother.

We went on a Saturday morning, only waited about 10 minutes total. It was really good.
If you go to the Buddha, be sure to walk around the temple complex, it is very nice.
Suggestion would be:
Option 1:
Cable Car to Buddha,
Lunch at the temple's vegetarian restaurant
(100HKD per person, set menu in the VIP section, more than you could possibly eat and very good)
Cable Car back to Tung Chung and go for a shop in the mall
(some new outlet shops including Nike and Addidas)
Option 2
Cable Car to Buddha
Bus to Tai O (old fishing village on stilts)
Lunch at Tai O
Bus to Mui Wo
Ferry to Central
Cable Car to Buddha
Bus or Taxi it Cheung Sha Wan Beach
Lunch at The Steop
Bus or Taxi to Mui Wo
Ferry to Central
Or some combination of the above...
It is a great day out, and if you have children, they let you push the pram right onto the cable car which made it really easy.
