Frying Pans

What is the deal with frying pans?. I saw a Langostina frying pan for 2K dollars , then a teflon (which i hear gives you cancer) frying pan for 200. How can i fry my eggs so they dont stick to the pan?.

My understanding is teflon is okay as long as it does not have scratches. Once it has scratches you have to discard it.


A thicker pan distributes heat more evenly.


Try a bit of olive oil or butter in the pan before you fry your eggs to prevent them sticking.

SKK and Scanpan made pans with a titanium non-stick coating. Haven't seen them in HK yet but you should be able to order them on. Cost for a frying pan is about HK$600+.


BTW, the eggs shouldn't stick as you baste them with the oil which keeps them "slippery". Also make sure the eggs are as fresh as possible.




Abstract from an article published in the Royal Society of Chemistry in 2005:

"Salts of pentadecafluorooctanoic acid (PFOA) are polymerization aids used in the manufacture of fluoropolymers; one of the applications of fluoropolymers is the coating of metal cookware products. A method was developed to determine if PFOA might be present in and extracted from the surface of commercial frying pans coated with a DuPont fluoropolymer under simulated cooking conditions. Commercial grade cookware was obtained, then extracted with water and ethanol/water mixtures at 100 and 125 uC, and the resulting extracts were analyzed by liquid chromatography tandem mass spectrometry (LC/MS/MS). Detection and quantification limits as low as 100 pg cm22 were demonstrated. None of the fluoropolymer treated cookware samples

analyzed showed detectable levels of PFOA when extracted under simulated cooking conditions."

Important too is how you clean and maintain your pans. Don't wash them while still hot. Don't use abrasive cleaners to scrub off burnt food. Instead sprinkle generously with baking soda and leave overnight then wash with warm sudsy water. It also helps to coat with some oil before storage if you don't use it frequently.


I use Mayer and Tefal which are both very affordable. Mine has lasted for over 2 years already and still cooks evenly without sticking.
