I am thinking of inviting my husband's colleagues (Europeans / Americans) for Japanese dinner and seeking for ideas. What is your favourite Japanese dish?

The cold creamy tofu with soya sauce and fresh grated ginger and chopped chives for starters....

I would not recommend cold tofu in this weather, but it is great during summer.
How about:
-Chawan mushi(steamed custard with added ingredients like chicken, shrimp and vegs. esp mushroom)
-"make your own sushi", all my guests and friends love it.
Ingredients like salmon, avocado, asstd. vegs, nori from Korea, just about anything.
In Japan we are quite exacting but I have learned to mix and combine whenever we live overseas.
-for dessert, macha(green tea ice-cream) or azuki(red beans, with green tea of course.
