Pound cake, moist type & coarse texture

Hi,

Does anyone have a good receipe for a moist type and coarse texture pound cake? Even better if you have different versions - zest of lemon, fruits, almonds, etc. Thanks a lot!

Not sure quite what you mean by a "coarse texture". For a cake with a bit of a "crunch", polenta is great. I have a few recipes for polenta cakes (e.g. lime, orange - made with ground almonds and polenta) if you are interested.


I have a quick recipe for a lemon drizzle cake, which has a slightly crunchy, sticky topping.


Also a demerara lemon cake made from ground almonds and flour - this takes a bit longer.


I have the recipe for Claudia Roden's lovely Orange and Polenta cake. It's very simple but takes two hours to boil the oranges. It's more of a pudding-cake but hmmmmmmmm.
