Congee

Hi

Does anyone know if it is ok to freeze cubes of congee? I find it frustrating have to cook it and baby not eating a lot of it. I don't want to keep it in the fridge for days as well.

Yes, I freeze my congee in the ice cube trays for bub. Let the congee cool down first them pop into the freezer. I think it can stay there for upto 2 months.

it becomes quite glue-like when you freeze it so i will add some water and stir before i pop it into the microwave so that it becomes more liquid-ish again.

good luck. i freeze my brown rice congee - on its own, the defrosted version taste weird but ok if you had cooked it with something else.


don't know why, it's just my experience when cooking for my 11 month old anyway!

It's OK to freeze the congee into cube for 1 week, so does human milk. The cooling guideline for foods generally is


· from 60oC to 20oC within 2 hours or less; and


· from 20oC to 4oC within 4 hours or less.





The congee can be cooled quickly if water volume is reduced, i.e. to prepare thick congee and then dilute by water when in use. The congee cube should be reheated to 75oC or above as quickly as possible. The congee can be reheated once.
